Today’s dish is a simply delicious Dijon Chicken Quinoa Skillet.  Full of flavor and extremely satisfying, this lunch or dinner meal just got healthy, simple, and ready in 30 minutes.

I love chicken, I honestly think I eat it 4 to 5 times a week, but what I do with the chicken to keep it fun and my tastebuds still wanting it is name of the game. So today when I made this Dijon Chicken Quinoa Skillet I was thrilled with the flavor, taste, and of course the short time it took to make. Kale is amazing for you, and it is perfect in this dish, soft and a bit more mild than eating it raw, but nonetheless it works.

If you have access to quinoa in microwavable bags in the freezer section of your grocery store it is perfect for this dish. You don’t have to wait 15-20 minutes for it to cook you can just put the bag in the microwave for 5 minutes and let it do its thing while you are browning your chicken. Once the chicken is cooked you can immediately add the quinoa and the time spent cooking is cut in half, now that is music to my ears.

The mixture of dijon mustard, maple syrup, and lemon juice may sound, mmmm well a little odd, but it is fantastic! It gives this Dijon Chicken Quinoa Skillet a little zest of flavor and is not too sweet. Dijon Chicken Quinoa Skillet is fast, fresh and taste amazing. It is protein packed and tastebud approved. Dijon Chicken Quinoa Skillet

Ingredients
  1. 1 lb-boneless skinless chicken breast cut into 2" pieces
  2. 3-tsp oil
  3. 1/4-tsp sea salt
  4. 1/2-tsp ground black pepper
  5. 1-cup quinoa ( I used microwavable bag of quinoa)
  6. 5-oz baby kale (about 5 cups)
  7. 3-tbsp dijon mustard
  8. 2-tbsp pure maple syrup
  9. 1-tbsp fresh lemon juice
  10. 1/3-cup dried unsweetened cranberries
  11. cooking spray
Instructions
  1. In a large skillet or saute pan on medium-high heat, spay pan with cooking spray (or you can use oil). Add chicken and season with salt and pepper and cook, stirring occasionally until browned.
  2. Place microwaveable quinoa in microwave and cook according to package instructions about 4-5minutes.
  3. Add cooked quinoa to chicken and mix until combined
  4. Add about half of the kale and cover skillet to let it wilt slightly, about 1 minute. Add remaining kale and stir until combined.
  5. Cover and simmer until kale is tender about 4 minutes
  6. In a small bowl whisk together mustard, maple syrup, lemon juice and 3 tsp oil.
  7. Add about half the mustard sauce and cranberries to skillet and stir to combine.
  8. Divide among plates and drizzle evenly with remaining mustard sauce. Enjoy
