Each week at church I bring in a treat to my class to enjoy while listening to the lesson. The week I bought these Protein Pumpkin Bars they were devoured before class was even over. These Protein Pumpkin Bars have satisfied two big needs in my life, health and pure yumminess. With every bite of these Protein Pumpkin bars leaves just a little bit of happiness in my soul. The cinnamon and gloves smell so good, the pumpkin creates a moist texture while the protein packed icing adds just enough sweet to satisfy my class full of sweet tooth’s.
Protein Pumpkin bars are a great snack to eat when you are craving something sweet or even to refuel your energy when hitting the stores on Black Friday, driving the kids around from place to place or a mid-night snack (shh) Not only do they provide protein and energy, but pumpkin has such great health benefits. It is rich in Beta-Carotene, low calorie, yet helps to fill you up, a good source of healthy fats, protects the skin, boost your mood and immune system, plus much more. The health benefits alone make Protein Pumpkin Bars such a fit-fabulous choice when making a dessert.
- 1/2-cup sugar/splenda blend mix
- 1/2-cup unsweetened applesauce
- 1-tsp ground cinnamon
- 1-1/2-tsp ground ginger
- 1/2-tsp ground cloves
- 1-tsp baking powder
- 1-tsp baking soda
- 1/2-tsp salt
- 2-tsp vanilla extract
- 4-large egg whites (4 TBSP liquid egg whites)
- 2-15oz can RAW pumpkin (NOT pumpkin pie filling)
- 2-Cups of oat flour
- 2-scoops vanilla whey protein
- 1/2-cup almond milk
- 3-TBSP plain yogurt
- 1/2-tsp ground cinnamon
- 1-TBSP honey
- 1-TBSP raw pumpkin
- 1-scoop vanilla protein
- Preheat oven to 350
- Spray a 9x13 pyrex dish with non-stick spray.
- Combine the first 11 ingredients and mix well.
- Add the final 3 ingredients and mix until incorporated.
- Spread half the batter into the Pyrex dish.
- Take 1-TBSP cinnamon and 1/4-cup of sugar/splenda blend mix, mix together, and sprinkle over the batter, to create middle cinnamon layer.
- Pour remaining batter on top.
- Put in oven and bake for 30 minutes.
- While baking, mix all ingredients for yogurt topping.
- Let bars cool and then spread the yogurt topping on top.
