Avocado Chicken Salad is so simple to make it’s almost silly not to try. Its creamy texture and pop of fruit are such a fit-yummy flavor you will savor every bite.
Avocado Chicken Salad is truly going to be such a delicious meal you will not only find yourself, but all those you feed it too, doing the, “da da da da daaa”, the chicken dance. Avocado Chicken Salad is full of healthy goodness. Loaded with chicken and greek yogurt for protein, avocado for your healthy fats (yes we all need the feared “F” word),and grapes that will satisfy your sweet tooth.
I love to make salads like this because they are so versatile. They can be used as the heart of a sandwich between toasted whole wheat bread, or brought as a side dish served with triscuits or pretzels. Avocado Chicken Salad can be made into lettuce cups. It can become the center of your table in place of a cheese ball, or you can just enjoy it straight out of the bowl. However you want to eat it is up to you, but it is so quick and easy to make it will be a fit-fabulous addition to your recipe repertoire. xoxo!
- 1-rotisserie chicken( about 3 cups), I only use the breast meat
- 2-avocado
- 1/2-teaspoon salt
- 1-teaspoon fresh garlic-chopped
- 1-teaspoon cayenne pepper
- 1-cup of grapes( of your choice), sliced in half
- 3-green onions chopped
- 1/4-cup plain greek yogurt
- 2-tablespoons Italian parsley
- Remove skin from chicken, remove breast meat, shred, and put into a large bowl.
- In a separate bowl, mash the avocados, and mix in fresh garlic and salt.
- Add, avocado mix, cayenne pepper, grapes, chopped green onion, greek yogurt, and parsley into chicken and mix until combined.
- Chill until ready to serve. (great on lettuce cups, whole wheat rolls, or triscuit). enjoy!

This was so much better than the one I used to make. The avocado makes it soooo much better. I did have to make a couple adjustments. I couldn’t find the cayenne pepper and couldn’t eat yogurt at the time (I just used mayo) and I added sliced almonds. We all liked. Yes, my little picky eaters thought it was good. I am trying more of your recipes and am pretty sure they will all be this good!
