Thanksgiving is coming the goose is getting fit! I love the holidays and Thanksgiving is my favorite holiday. This Chicken Sausage Stuffing will be a real holiday home run. Bursting with flavor and packed full of lean protein, Chicken Sausage Stuffing will please even the pickiest of eaters. I love how the flavor of the bread mixture with the onions and celery come together and the chicken sausage gives this stuffing the fit-licious element of surprise.

I grew up loving my Mom’s stuffing, which turned me into a stuffing “snob.” Not wanting to “cheat” on my Mom with a new stuffing I added chicken sausage to her’s, which stepped up the flavor intensity of a holiday tradition. Chicken Sausage Stuffing not only is delicious from the turkey, but I like to put the extra into a muffin pan. They remain nice and moist on the inside, but have a light toasted crunch on the outside. Not to mention they look adorable set on the table in little muffin shapes. I made these Chicken Sausage Stuffing muffins for my family and the vote was unanimous, I am now in charge of the stuffing over the holidays. Ingredients
  1. 2-1/2 cups-Low sodium chicken broth
  2. 2-stalks celery, coarsely chopped
  3. 1-large onion, coarsely chopped
  4. 1-package of lean ground chicken sausage (Turkey Sausage works awesome too)
  5. 1-package Pepperidge Farm Herb Seasoned Stuffing, half wheat/half white mix
  6. Generous amount of black pepper or seasoned pepper
  7. 1-2: muffin pans
Lets Cook
  1. Preheat oven to 350 degrees F.
  2. Cook ground chicken sausage in medium sized fry pan.
  3. Heat chicken broth, celery, onion, and pepper in 3qt sauce pan over med-high heat.
  4. Bring to a boil.
  5. Reduce heat to low, cover, and cook 5 minutes or until veggies are tender.
  6. Transfer to a large mixing bowl.
  7. Add stuffing and ground chicken sausage and mix until combined.
  8. Put mixture into lightly greased muffin tins (and/or Turkey).
  9. Cook uncovered 15 minutes, then cover and cook 5 more min or until golden brown on top, Enjoy.
