BBQ-ing the avocado warms them up, softens them and gives them a great flavor. It also helps to make the salad creamy leaving out any need for dressing. The addition of the nectarines is so amazing in the salad, adding a little sweetness, while the tomatoes, onion and garlic keep the flavors bold. These salads are a simple side dish or appetizer and you could really add whatever you like in the salad.
BBQ Avocado Salads are very versatile, and are a snap to make. They are a great salad to make up if in a pinch for time and they look amazing. Squeeze a little fresh lime juice over the top just before serving or you could even serve them with tortilla chips and use the avocado as your edible bowl. - 4-avocados
- 1/2-onion chopped
- 15-baby tomatoes, chopped, cherry, yellow or both
- 2-chopped nectarines
- 1-garlic clove, chopped
- 1⁄4-teaspoon salt
- 1-tablespoon chopped fresh cilantro
- squeeze fresh lime juice
- fresh ground pepper
- Heat grill to medium high
- Cut avocados in half lengthwise, twist to separate and then carefully remove the seed from the other half.
- Combine all other ingredients.
- Squeeze fresh lime juice over avocados, season with salt and pepper then sear on grill for 3 minutes
- Spoon salad into the avocado halves.
- Sprinkle with additional salt and pepper, squeeze with lime juice and serve immediately. Enjoy!
