The first time I had these adorable little Coco-Nut Fit Bites was when I was in Arizona with my amazing friend Nicole. She whipped these up for my husband and I and we were hooked. I couldn’t believe how easy they were to make and it was all done in one kitchen appliance, the food processor (those things are amazing). I love recipes that can all be thrown in together without the chance of messing things up. Just toss everything in, mix, pulse and wha la! All the ingredients mix so well and allow you to pack and roll these little cuties into fit-fabulous bites. Coco-Nut Fit Bites are the perfect on the go snack. I keep mine in the refrigerator when I need a quick, healthy treat to satisfy my sweet tooth without overindulging. So the next time you need to grab and go, whip up a batch of these Coco-Nut Fit Bites. xoxo
- 2-Tablespoons ground flax seed
- 1-cup of oats
- 1-cup of pecans
- 1-cup raw coconut
- 2-cups pitted dates
- 1-Tablespoon coconut oil
- 1/2-Tablespoon pure maple syrup
- 1/2-teaspoon salt
- 1-Tablespoon vanilla
- 1/2-cup rice crispy cereal
- Grind oats in food processor for 30 seconds.
- Add in pecans and coconut and mix.
- Add in dates, coconut oil, pure maple syrup, salt, and vanilla and mix.
- Add in ground flaxseed and mix.
- Add in rice crispy cereal, but only pulse a few times, don't mix
- Roll into round balls and put on a cookie sheet lined with parchment paper, place in freezer for 1/2 hr, eat and enjoy!
