I have to admit, I have never thought about adding grapefruit and avocado together in a salad, but it is magnificent. There are four distinct flavors working in this salad and it all comes from the fruits and vegetable that goes into making it. The grapefruit is bitter, but not sour. The pear is lusciously sweet, the avocado smooth and buttery, and the green onion adding just the right amount of soft onion flavor. This Grapefruit-Avocado Salad with Poppy Seed Dressing has a wonderful bright and bold color that really sets it apart and makes it unique.
The homemade poppy seed dressing is the “icing on the cake” to this Grapefruit-Avocado Salad. It is smooth and creamy, but is not too sweet and has a little heat from the tobacco, worcestershire sauce and green onion. All the sweet and sour elements that are combined to make this salad are astonishing. I took this salad to a family dinner a few weeks ago and it was gone in seconds. I didn’t put the dressing on I brought it on the side so people could add as much or as little as they liked, but all anyone could talk about was how delicious it was. I think salad dressing is the finishing touch on something so simple and a reason to keep this salad in your salad repertoire.

- 1/2-head of iceburg lettuce – broken into bite size pieces
- 1/2-head of red leaf lettuce – broken into bite size pieces
- 2-grapefruits segments (with the membranes removed)
- 2-avocados, sliced
- 2- pears, thinly sliced (you can also substitute a tart apple for this recipe)
- 2– green onions, sliced
- 2 clove garlic, minced
- 2 green onions, diced thin and small
- 1 Tablespoon dijon mustard
- 1 Tablespoon poppy seeds
- 1 Tablespoon brown sugar
- 1 teaspoon worcestershire sauce
- 1 teaspoon salt
- Dash of Tabasco
- 1/2 Cup vinegar (red or white wine vinegar)
- 1/2 Cup olive oil
- 1/2 Cup liquid coconut oil (or you can use vegetable oil)
- Prepare the dressing first to give it time to chill in the fridge before tossing.
- Combine all dressing ingredients in a food processor and mix until well combined.
- Chill for a few hours before serving.
- Toss all the salad ingredients with the dressing right before serving. Enjoy!
