Sweet Potato Fries 11-10-14 

I think I have found “fry” heaven or maybe a fry I am not afraid of.  Either way Sweet Potatoes Fries are a great compliment to a lot of meals or lunches.  I love sweet potatoes and finding a healthy way to make fries is great for my nutritional needs.  Growing up going to McDonalds was such a fun thing to look forward to and the smell of the fries always made me want them, again and again.  Now I can enjoy all the guilty pleasures of “fast” food, but in a healthy way.  Sweet Potatoes Fries have such a nice crunch on the outside, but soft and mouth watering on the inside. With each bite,  you can taste the sweet perfection of the sweet potato accompanied with flavor from the mustard and pepper, and have just the right  pop of heat from the curry and cayenne pepper.  Sweet Potato Fries go great with this Thai Dipping Sauce, which is sweet and savory and will leave you saying “adios” to ketchup. 

Now having such a healthy snack or side to a great BBQ, salad, or sandwich, Sweet Potato Fries will replace your craving for any other fry.  Bye Bye McDonalds, hello Sweet Potato Fries.  Sweet Potatoes provide such a great source of Beta-Carotene, and vitamin C, A, E, and B-6, making them a fit-fabulous way to love a comfort food. xoxo

 

 

Sweet Potato Fries, with Thai Chili Dipping Sauce

Ingredients
  1. 2-sweet potatoes, cut into thick wedges
  2. 1-1/2 TBSP olive oil
  3. 1/2-tsp ground mustard
  4. 1-1/2-tsp curry powder
  5. 1/4-tsp cayenne pepper
  6. sea salt and pepper, to taste
  7. 1-gallon sized zip lock bag
Thai Dipping Sauce
  1. 1/4-cup teriyaki sauce
  2. 1/4-cup sweet chili sauce
Lets Cook
  1. Preheat over to 425 degrees F
  2. Place oil, spices, sea salt, and pepper into a gallon sized zip lock bag.
  3. Add sweet potatoes and toss until evenly coated.
  4. Spread the sweet potatoes in a single layer on a baking sheet.
  5. Bake for 20 minutes, then flip the wedges and cook an additional 15 minuets or until crispy.
  6. while baking: mix the teriyaki and chili sauce for dipping.
  7. Eat, dip and enjoy!
