So fresh, so good, and oh so easy to make, Buffalo Blue Chicken Salad will be the best salad to bring the heat even if the sun isn’t shining. The chicken in this salad is hot and spicy and taste perfect with the combination of the peppers and blue cheese crumbles. One of the great things about this recipe is that you don’t have to marinade the chicken in the Franks redhot sauce for very long to allow the flavor to really pop when mixed into the salad.

Six simple ingredients and 20 minutes is all you need to make this Buffalo Blue Chicken Salad. I added a little lite ranch dressing to balance out the hotter flavors of the banana peppers, chicken, and the slight bite from the blue cheese crumbles. It makes it a smooth transition form spicy to mild in every bite.

Ingredients
  1. 4-boneless, skinless cooked chicken
  2. 1/3-cup Frank's RedHot buffalo sauce
  3. 5-cups romaine lettuce chopped or spinach (or use both)
  4. 10- banana peppers (more or less if desired)
  5. 10-grape tomatoes, halved
  6. 10-golden cherry tomatoes, halved
  7. Sprinkle with low-fat blue cheese crumbles
  8. Lite Ranch dressing (optional)
Instructions
  1. Chop or shred the cooked chicken and place in a small bowl. Add buffalo sauce and toss until chicken is completely coated, set aside.
  2. In a large bowl, combine lettuce and/or spinach, banana peppers, tomatoes, and blue cheese crumbles. Add dressed chicken and toss together until combined.
  3. Add ranch dressing (or dressing of your choice) if desired, Enjoy!
